JOB DESCRIPTION

PASSIONATE PIZZA CHEF / COOK

The Apollo Bay Distillery is seeking to employ pizza chefs / cooks with a passion and drive to be a part of our exciting food journey.

In the coastal town of Apollo Bay, our distillery offers Naples style woodfired pizza.

All our dough is hand made in house and hand stretched to order, and cooked in our Italian woodfired / gas oven.

We are primarily a gin distillery, also offering 20 local craft beers on tap, locally roasted coffee and a wide range of whisky and Victorian wines.

ROLE AND RESPONSIBILTY

1. Food Production and Quality

The Chef/Cook is responsible for

· Prepares high-quality food items according to standardized recipes and instructions to meet production, delivery and service schedules.

· Setting up workstations with all needed ingredients and cooking equipment

· Preparing ingredients to use in cooking (chopping and peeling vegetables, cutting meat etc.)

· Serves meals or prepares for delivery by using correct portioning, meeting outlined standards, ensuring that food is at the correct temperature and is attractive and tasty. Tastes all prepared food items.

· Cleans kitchen after preparation and serving, maintaining high standards of cleanliness. Stores or discards excess food in accordance with safe food-handling procedures.

· Keeps refrigerators and storerooms clean and neat. Ensures food and supply items are stored per standards.

· Operates and maintains kitchen equipment as instructed.

· Reports needed maintenance, faulty equipment or accidents to the supervisor immediately.

· Attends in-service and safety meetings.

· Maintains good working relationships with co-workers, customers, administrators and managers.

· Performs job safely while maintaining a clean, safe work environment.

· Performs other duties as assigned.

2. Hygiene, Sanitation and Food Safety

The Chef/Cook is responsible for assisting:

· evolving systems for stock control, stock rotation and food storage that will be viewed by the local health officer as being of excellent standard;

· installing stock rotation and shelf life criteria that will ensure maximum quality and minimum spoilage;

· ensuring the kitchen is in a state for public presentation at all times at the end of the shift;

· ensuring proper cleaning and maintenance schedules and procedures are implemented and adhered to at all times;

· adhering to the highest food handling regulations and standards;

· adhering to the Food Safety Plan;

· ensuring all kitchen staff are trained in the regulations and procedures of the Food Safety Plan;

3. Occupational Health & Safety

The Chef/Cook is responsible to:

· adhere to occupational health and safety guidelines, as outlined in the induction manual and other policies;

· use the appropriate equipment and clothing designed to protect staff safety and prevent accidents;

· reporting any potentially dangerous situations or practices to the manager and shift leader.
